Juicy Fruits

“Food, glorious food”. That thought comes to mind as you board a cruise ship on a culinary adventure.  On an average 7 day cruise, with 2,800 people, approximately 20,000 pounds of fresh fruit will be consumed.  Fresh fruits and vegetables are stored in various stages of ripeness, however, bananas are stored separately as these give off gases that can spoil other fruits.  The Chef’s carefully monitor fruit consumption – if the guests are eating a lot, they may have to reprovision. If they’re not eating enough, they will have to find uses for fruit. That’s why strawberries flambé and cherries jubilee are such frequent cruise desserts. Bananas and peaches routinely turn up at mealtime as Bananas Foster or peach sorbet.
